This was the special I enjoyed today at my beloved Restaurante Amanecer Tapatio, Collins and Liberty Sts., Joliet. Two chicken legs in a medium-dark red sauce of finely ground peanuts. The sauce had a little bit of fire to it. The freshly made tortillas were better than ever. Is pollo en cacahuate available anywhere else in Chicagoland? I'd like to try other renditions of it. Last week I had pollo en mole verde at Amanacer Tapatio and the sauce had a pleasing graininess to it and a hint of lime. Come try the tasteful colors down here.
