Last year I made a very successful poc chuc (Yucatecan pulled pork) recipe using my Instant Pot. This was the recipe, more or less:
Approx 3 lbs of pork shoulder, cut into strips.
3/4 cup sour orange juice
1/3 cup of water
1 tsp oregano
1 tsp achiote powder
1/4 tsp allspice
6 cloves of garlic, pressed
1 onion, sliced
Brown the pork shoulder pieces in a bit of oil. Add all the other ingredients. Pressure cook for 30 mins.
It came out great! I used oranges from a friend's tree that were quite sour (i.e. not technically the same sour orange from Yucatan, but flavors were close).
Here's my question:
I am very fortunate to grow passionfruit here in California, and we have a lot right now. Should I use passionfruit juice instead of orange juice in this recipe to see what happens? They are both flavorful and sour. But I can't find any recipes that use passionfruit in this way.
So, what do you think?
A. Yes, this sounds like it would be amazing.
B. Might not be that great, but won't be bad. Might as well try it.
C. This sounds like a waste of good passionfruit. Use it to make good passionfruit curd or mojitos instead.*
D. This is a bad idea for some other reason that I haven't thought of.

*We have enough passionfruit that we have already made plenty of curd *and* cocktails, and will continue to do this regardless.
