I'm making posole tonight and my standard recipe requires me to poach the chicken. I usually get home, change, and run to the gym. I have about a half an hour from the time I run home to the time I leave for the gym.
What I want to do is get the broth boiling and get the chicken in, boiling for 5-10 minutes before turning off the burner. I'd then let it sit in the hot broth for a little over an hour.
Is this an ok practice? It's not a long period of time, so I'm wondering if there would be any adverse effects. Thanks!
