Pizza Dough Help

Whenever I make pizza dough at home, I can never get the dough to stretch or be formed similar to the beautiful, perfectly conditioned dough I see at my local NYC pizzeria. The dough seems to "shrink back" after stretching or rolling out. Any suggestions as to how I could alter my recipe to get great thin crust dough that can be rolled or stretched easily. Thanks in advance :)
