So I showed my kids my carefully planned out Pesach menu today, and the response I got was, "Where's the soup?" They have been eating a lot of soup lately, and I'm not complaining because they get lots of veggies, beans and grains in one dish before they leave the table to play with their friends. Unfortunately, I completely forgot to incorporate this new development into my Pesach plan. I'm looking for some good and hearty Pesach family tested recipes that can be accompanied by a slice of matzah and cream cheese or a hard boiled egg. They love lemon, mushrooms, tomatoes, olives and capers as well as most vegetables. I can usually sneak some green veggies in there as long as it is not the main ingredient/color of the soup. Vegetarian, non-kitnyot, gebrokts OK. Ideas welcome.
