I just made a batch of Chicha Morada which by the way turned out delishous. Now I have all this leftover purple corn and seems like such a waste to just toss it out. Does anyone know what they do in Peru with the leftover corn? Does anyone have any ideas on what to do with it? It could use a little more cooking to soften it up further and it is sweet do to the fruit and sugar but the flavor is pretty great. I was think maybe a corn pudding? I'm totally at a loss. Please send help!!!
