How to Pebble Rather than Puree Ice in a Vitamix

Does anyone have any tips on how to get less of a slush and more of a julep-style crush of ice in a standard-style (5200) Vitamix (i.e. just analog with the tall carafe)? Every video I've found just has people making kind of a snowcone slurry, which is awesome, but bad for a lot of the cocktail uses I have in mind.
