Peach Farm advice and favorites?...

Last spotted our intrepid hound was slipping out for a 1 am snack of a -most well known local shellfish- at the Farm. Nice thing about this place: show up at one thirty in the morning and order a full seafood dinner and they're like: '(yawn, ok, so what's next?'-(damn, i love that!) So i'm sitting there on the horns of a dilemma, which to choose, the black bean sauce (my favorite) or the cleaner and more sharp sca/ginger... so i go with the black bean which is great as usual, and i notice, has a few chunks of ginger and scallion hanging around the edges as well :•) so this shell fish is so good that it takes me a few bites to notice, while the flavor is right on, there is practically none of the bb sauce on he serving dish, i mention this to my early morning server and voila, a bowl of steaming black bean sauce and scallion appears... so give that a try over rice next time you've got a black bean jones...
OK, thats my advise, here's a question: I'm in kind of a stasis when it comes to ordering at these Cantonese seafood places, I love the above 2 preparations, and usually order one or the other over Hommard or Dungennes if its around(sometimes the clams/BBs too) -The Peach staff said if i wanted to try something else to ck. out the tank and do that, (on tuesday this included Flounder, BlackFish, one Cod fish, some eel- he especially recommended the fresh swimming Prawns/Shrimp @$20-/lb, said they were prepared simply poached...
are the fresh swimmers the same headon ones you guys get salt and peppered?
did read the in depth gg new year synopsis, (from '02?) but still need more everyday suggestions...
I know you guys tried most of these? what preparations work best? Please just post one or two favorite dishes here, (even if only a sometime special) and well have a good sub-menu listing)

Nota benne: that popular red shellfish was priced @ about 17-18, when asked if they had a smaller one, they produced a simmilarly sized hacked plate for 13-14 - add rice (and extra sauce) & its enough for small dinner. Probably the same hombre, but did i notice a slight lack of tail?
