other pasta, potato or rice recipe that can be used as an hors d'oeuvre at an open house. I need to bring something to a New Year's Day open house and hostess's request this morning changed my original plan. She is lacking starch items and so asked for something with potato, pasta or rice.Her other caveat was that it be finger food or just generally easy to eat. I'll need to make it ahead one day for local travel on Thursday as I don't want to start cooking New Year's Day morning. Also, would probably also be easiest if can be served room temp but if it needs to be warmed we can do that too.
I've found a few recipes that have promise including one that is made in small muffin tins but I always value the resident CH cooks' thoughts. If you have a great pasta frittata or other recipe that meets the above criteria please post or direct me to it. FYI - I'm not a "deep fryer" cook and don't have a thermometer for the oil temp.
