Paris: Best place for first 3-star lunch?

I apologize if this topic is passe at this point, but I would really appreciate some help with choosing a restaurant for a "first time in a 3 star" moment.

My girlfriend and I are traveling to Paris in late June, and I'd like to get reservations for a really spectacular lunch as a surprise. I've looked around quite a bit, and the three that have really stood out to me (based on writings on this board and elsewhere) have been Lucas-Carton, Guy Savoy and Le Grand Vefour. However, I'm open to suggestions, as well as to information on those three in particular. If it changes your recs at all, we'll definitely be going for the lunch menu, as we're both med students and not made of money (quite the opposite, in fact!).

In terms of what we'd like, I think a place that is more traditional (for a first 3-star experience) without being overly stuffy would be ideal. We both speak French reasonably well, so ordering and communicating won't be a problem. We both love good wine, and that would definitely be an integral part of the meal for us.

So I ask you good folk: where should we go for lunch on a Thursday or Friday in June to have the first "best meal of our lives," or at least spend a lot trying?
