Looking for Paris dinner recommendations - what's worth visiting in 2019?

We have gone to Paris 6 times in the last decade and going again in September 2019. Past favourites were Pages, Spring, Septime, Le Chateaubriand, Frenchie, L' Ami Jean, La Condesa, Pierre Sang Signature, Roubuchon,Ze Kitchen gallerie, Paul Bert.

Some of these places (like Ami Jean or Frenchie) we managed to find well before they have been widely publicized and swamped with tourists.

Would love some suggestions about interesting newcomers as well as other simply awesome places that we should go to.

Of course, I have been reading recent CH posts as well but would still appreciate direct suggestions!

Also looking for a 2-3 star restaurant that is not super formal and the food is not very heavy, perhaps leaning towards seafood or lighter versions of meat. (Something similar to, say, El Celler de Can Roca in Girona would be ideal)
