Paring Knife Recommendations

My mom mentioned to me the other day that she would like a new paring knife, so I thought I would buy her a nice one for Christmas. Any recs? I don't really use one myself, so I don't have much experience. Personally I peel apples with a veggie peeler, and use my Shun 8" Chef Knife even for small jobs like mincing shallots or ginger (overkill, i know).

ATK recommended the Victorinox, but it just seems so cheap. I also looked at Wusthof, but there's such a variety I don't know where to start: 3.5" Classic, 3.5" Classic Ikon, 3" Gourmet, 2.75" Trimming Knife? I know a couple things she uses hers for are peeling and coring apples and trimming strawberries. I'm sure she uses it for much more, but didn't ask specifically.
