Yes, that is a bit backwards. However, I received a beautiful bottle of Flora Springs 2005 Trilogy, and would like to build a nice but simple dinner around it on New Year's Day.
For my personal tastes, I have ruled out game, lamb and potatoes.
I am thinking either steak w/ red wine, shallots, beef demi , dried cherries & pitted, dried black olives, steak florantine, osso bucco , or a hunter's chicken with wild mushroms and a beefy tomato sauce for the main. Broccolini for vegetable. Would love to introduce a gorganzola flavor. And I adore pasta.
