Why Do Oven Temps on Clad Stainless Cookware Vary?

melajoh | Feb 1, 202110:56 AM     5

Hi Cookware Experts, I am looking at All-Clad Copper Core and a nearly identical set sold by Costco ("Kirkland Signature") for several hundred less. Why is the All-Clad set oven/broiler safe to 600F, while the Costco set is only safe to 380F? They are both 18/10 stainless with stainless handles and lids. What accounts for this huge difference in oven safe temps? I'm assuming it's something to do with the quality of the steel, but have no idea what would cause that. TIA.
