The Tampa Bay Tribune has an excellent article here about Outback tightening its belt. At risk is Paul Lee's Chinese Kitchen (brainchild of Paul Fleming), which apparently underestimated the competition, especially from P.F. Chang's (also the brainchild of Paul Fleming, hmmm). Also at risk, it appears, is Roy's (expense account Hawaiian).
Outback's CEO may not have a clue about "concepting" Chinese food, but he certainly can stir-fry his metaphors:
``The Paul Lee's brand is one in which we're in the process of making some changes, dialing this thing in,'' Allen said. ``Once we've dialed it in, we'll step on the gas.``
I can hardly wait.
