I've searched the board and there are some suggestions that sound good, but there are a couple of things I'm missing. CHICKEN FRIED STEAK. My family's from Midland and whenever I visit I eat chicken fried steak over and over. In New York, I've not found a good version. I can't go to Texas and not leave full of deep-fried beef.

Also, wondering if there is good BBQ along the route. Truck stops, roadside stands, restaurants, paper plates, I don't care about the ambience, just the brisket.

Are the food options better if we avoid the Highway? Are there fried fish and oyster shacks in Port Arthur for example?

Any help would be appreciated.
