ordering "doneness" of meat in Argentina....

I recently read that most meat in Argentina is cooked "medium." I don't know if that's true, but is one able to order "rare" or "medium rare" w/o it being a big faux pas?

Any CH wisdom on this topic--especially the exact terminology in Spanish on how to order things rare-- will be greatly appreciated.
