After reading the recent threads about Nigella's clementine cake, I thought I'd post about my success with a similar recipe. This one is Clotilde's from "Chocolate and Zucchini" and uses whole, organic oranges, fresh ginger, and crystallized ginger. Delicious!
Everyone is amazed that it doesn't contain any flour. The texture is deceptively light and foamy. What I like best is that, unlike for most traditional nut cakes, you don't need to separate the eggs.
Makes a wonderful dessert whenever something light and citrusy is in order. I also eat slabs with a double espresso in the afternoon.
