ORANGE BREAD FOR TOAST

This is very quick. It uses the whole orange so it has a slight anti-sweetness to it that goes well with tea in wintertime. In food processor put 1 navel orange cut-up, 2 large eggs, 1/3 cup oil, 1 cup sugar, 1 tsp salt, 3 tsp baking powder, and 3/4 cup milk. Process until orange is completely destroyed. Add 1 cup flour and just zap processor on and off quickly to mix. In large mixing bowl put 2 cups flour. Add any solids you might want in the bread (walnuts, dates, golden raisins, cranberries etc) and mix them around to flour them so they won't sink in the batter. Dump contents of food processor into bowl and mix. Bake as a loaf (I use a 4 x 11 Dr Oetker pan). Bake about an hour. Cool. Wrap in heavy foil and wait 24 hours to cut a slice. Use to make toast.
