omakase at soigne review

can some one shout incredible?? went to soigne on wed. for the omakase menu. the theme ingredient was octopus. unbelieveable taste and flavors. first course was an octo pizza on char grilled pizza dough with eggplant caviar and fennel confit. great combination of flavor between the octo and charred dough and fennel
second course consisted of an octo pasta with pappardelle, lobster nuggets and butter. very intense and velvety. third course was an octo salad with wakame seaweed, fennel viaigrette. i thought the dish could've used crispier greens as a salad bed but the combination was very intriguing nonetheless. the 4th course was a spicy octo stirfry with cellophane noodles. the octo was par fried in oil then stirfried with the noodles. not too spicy but very balanced in flavor especially the heat and acid combination. the last course consisted of a cheese platter with cheeses from italy, united states and france. all in all incredible experience. the price was a little on the high side at 65 per person but i think it was well worth it. i know my dinner guests did not expect this level of food in baltimore as they are from the west coast. i heard the chef is from nyc which explains the ecclectic, ebullient menu.. anyway just had to say wow and recommend the omakase menu to anyone who is a serious's only available on wednesdays
