Hi!

I have a very rudimentary understanding of Montreal cuisine but after doing some rudimentary research it seems that it is pretty offal heavy. (Excuse my ignorance!) I adore offal but dont get to try it enough. I would really love to try duck hearts or perhaps brain. Are there any restaurants that are particularly offal heavy? Or does one not need to bother actively seeking out offal, assuming a wide prevalence?

I know it is not offal but i have heard that beaver meat is popular and super tasty. Is it easy to find in the city?

Any tips or pointers would be greatly appreciated!
