I have used a recipe for several years but now looking to switch it up. After reading many on line I am hoping that someone can tell me --- if recipe calls for eqq white and water coating, drain, then mix with spices in a bag --- I think I would like to add in melted butter - I am thinking I would melt butter, add the spices/sugars to that pot then pour over the already coated nuts. What does that eqq white coating do? And I am combining a few recipes - so the butter isn't in any of the egg white recipes and I was wondering if someone can share their experience if any with this type of nut recipe. Of course, the nuts will be baked off and cooled.
