Nova salmon

I've read with interest about the various smoked salmon options available in the DC-Baltimore area to a transplanted New Yorker spoiled by Zabars quality.

We occasionally get those vacuum-packed bags from Fresh Fields, but the overall quality is disappointing.

One thing true Nova aficionados will understand is that a lot of what makes smoked salmon good is how it's sliced. Those guys at Zabars and the Lower East Side appetizing stores of my youth had really sharp knives and were expert at slicing the fish very thin, without it falling apart. Add that to the intrinsic quality of the fish and its incredible freshness, and you got The Real Thing.

Is there any place in the DC/Baltimore area that slices its own smoked fish right in front of you and has competent slicers, as well as the quality fish? (Sable, sturgeon, as well as lox?)

I wonder.
