The Nook & mac 'n' cheese search

In today's LA Times, SIV's review of the Nook singles out the mac 'n' cheese as maybe the best she has ever had. High praise...

.and in my mind, undeserved. I went to the Nook on Tuesday and had a very good meal. I ordered the mac 'n' cheese side, which was a huge portion for $4. But, while tasty, it was much more one note than I like--heavy cheese and not much else. Maybe I am a snob because I enjoy taking several hours in my kitchen to make a bechamel sauce and then using that to make a creamy, mustardy mac 'n' cheese.

So, I've read discussions recently on Chowhound on where to get the best mac 'n' cheese in LA. What I am wondering is -- where do I find the best not-basic version??? I am looking for complexity here. I realize that may be anathema to folks who love their comfort food to be as they remember from childhood, but I'd like a bechamel base or some special combination of cheeses or some super ingredients added to the basic mix of pasta and milk fat or or or...

Any ideas?
