Some good news for Las Vegas Chowhounds, and especially those that had to deal with the unfortunate direction as this old thread progressed - (http://chowhound.chow.com/topics/8587...). It was well-prepared food in a location that just was not viable for that kind of cuisine. But those same folks are back now and arguably better than ever, under the heading of "The Noodle Man", at 6870 South Rainbow. They are still a ways from the Spring Mountain corridor, but at least there is easy access, with the location in a strip mall immediately off of the 215-Rainbow exit (southeast corner).
The restaurant is small but has a nice vibe to it, including an open kitchen, and you can sit at bar stools and watch the noodles being made. As one would expect the menu is focused on noodle dishes, from soups to lo meins, but also includes several varieties of house-made dumplings. There is nothing over $8, which makes it outstanding bang for the buck. Today's visit was a "Shanxi Noodle Soup" with wide noodles and the right balance of pickled vegetables to cut through the fat of the meat, while also providing for a little kick. It was a quick reminder of why the first location was a regular part of the rotation while it lasted.
