here are the recipes for the hot sauces, fish sauce is optional, but i use it and it comes close to mom's cooking.

roasted mushroom:

20oz fresh button mushrooms
2 large hot peppers, poked with a knife twice
(1/2 bell pepper for a non-spicy dish)
1 head garlic
6 shallots or 1 med onion, sliced
1/2tsp salt
2 tbsp fish sauce (optional)
1 stalk scallion, chopped
1/2 cup chopped cilantro

preheat broiler. place mushrooms, peppers, garlic, and shallots on a baking pan. broil 10min on each side. turn off oven and let sit in the oven for 10min. in the food processor add peppers, garlic, and shallots. chop 10sec. add mushrooms, salt, and fish sauce. chop another 5sec. add scallion and cilantro and mix well with a spoon. serve at room temp with rice and steamed veg or as a side dish with steak or grilled fish.

tomato sauce:

1 head garlic
6 shallots or 1 med onion, sliced
2 large red hot peppers(optional)
1 red bell pepper
2 large tomatoes, halved
2 tsp salt
2 tbsp fish sauce (optional)
1 tbsp sugar
1/2 cup chopped cilantro

preheat broiler. on a baking pan place garlic, shallots, hot peppers, bell pepper and tomatoes (do not oil them). broil 10min on each side. turn off the heat and let them sit in the oven for 15min. in a food processor add garlic, shallots, hot peppers, and red pepper. chop 10sec. add tomatoes, salt, fish sauce, and sugar. chop another 5 sec. it should be a little chunky. add cilantro and turn on and off immediately. serve as a side dish with roasted chicken, steamed veg, and rice.
