Nicely gelatinized smoked turkey stock

I wasn't sure if it would be good but I made a turkey stock with my smoked turkey carcass by cooking it in a crock pot until the bones crumbled... I think it will be too strong in flavor on its own for soup but might be good thinned with some store bought broth and in maybe a kale soup or something like that.

Any other ideas for a sauce or other application this would be good in? I mean I am not sure it'll be good but I can't throw away a turkey skeleton right?
