thank you, oh wise and wonderful chowhounds. pizza heaven awaited me only two blocks away, and i wouldn't have known if it weren't for all of you zealots.
tonight, being the initiation, i felt i needed to test the control, that standard (in my mind) that is truly pizza. i do this to incite responses, preferably non-violent. the perfect pizza? pepperoni and onion.
crust: fabulous. just a little thicker than classic new york but still foldable. nice gluten for tearing.
sauce: basic and well-done. a true oscar performance for best supporting actor (think judi dench, shakespeare in love)
toppings: i cook for a living so allow me a little leeway. you can screw up onions. the biggest tests are in the smallest things. these guys are great. thinly sliced to cook through in the alloted time, amply spread to all edges for satisfaction in each bite. pepperoni sliced perfectly, cooked perfectly, but in all honesty i would pay to see a better grade of pepperoni. maybe a high end pepperoni along with the other bountiful choices in the premium list.
service: it's a counter, again though, the little things. two guys working, two big smiles, one pie right on time. way to go.
it's good to be back home.
