I am always looking for easy dishes to serve firiends that don't require long periods of prep or messing up the entire kitchen. Last night, I made a recipe I found in Cooking Light for an orzo, shrimp, and feta bake and served it to our guests. It was a hit and everyone had seconds. Since this was a last minute causal affair, I pulled the meal together with a ceasar salad, bread, and homeade blueberry cheesecake ice cream. Honestly, the dinner came together in 30-40 minutes (except for the ice cream, which I made earlier). Thought others may also enjoy the recipe. NOTE: the recipe serves 2 so I doubled it to serve 4.
