Hi there. I need a solution to this.I'm sure it's ridiculously simple, but it continues to elude me. I consider myself a fairly good cook. I'm the sole cook for my family, and I make a wide variety of dishes. So I can't understand how a simple pancake can prove to be so difficult. Made breakfast for dinner tonight and I had the same problem. My cakes turn out golden, thick, and spongy just like I like them. However the flip side comes out hard. And the surface of that side is "splotchy", not even like the other side.
I use vegetable oil to grease my nonstick pan before heating it. I keep the fire low/medium, wait for bubbles to pop (but flip before surface looks dry). Am I waiting too long? Is my fire too low?
Any tips would be appreciated.
