I need a great recipe, tried and true, for Mon Blanc, or Monte Bianco (the Italian version). I have the N.Y.Times recipe, and also Marcella Hazan's (which also contains chocolate). What I'm looking for is one, without chocolate, only chestnuts and whipped cream, that someone has actually made and loved. Also, can fresh, sweetened (in simple syrup) chestnuts be substituted for fresh? Or are they too sweet? Also, will chestnuts in a glass jar, that have been cooked, but not sweetened, be used? Or, is my only route fresh? Welcome all suggestions. Thanks in advance.
