Help me to narrow down Tokyo restaurants

I will be visiting Tokyo for new year's eve 2018 all the way until the 10th of January. What will be important is I will be traveling with my wife and 2 kids, one is a 4.5 year old and a 14 month old.

Of course, we prefer to eat at some of Tokyo's most popular/best/hot seats/legendary places but we need to make sure these places are kids friendly, especially with toddlers and a 14 month baby with strollers.

Money is no object, and we eat everything and anything and consider ourselves sophisticated chowhounds with global experience, but we don't particularly want to eat in hotels, maybe once or twice, and we would like to diversify our culinary experience from local franchise/top local favorites/high end places/legendary culinary places.

Will be staying in...

Shibuya area (3 days - including new year's eve and 1 January)
Tokyo Station area (4 days)
Tokyo Disney area / Tokyo Bay (2 days)

Would like to taste the following categories ...

Sushi/Sashimi - maybe one family places and one top place ? Should we go visit Tsujiki in the blistering cold winter with two toddlers on strollers ?
Tonkatsu - what's the most kids friendly place and the most convenient
Ramen - will be staying in Tokyo Station, so we are thinking about visiting Ramen street downstairs, no chicken for me. Only pork.

Curry - where to have the best in the most family friendly places ?
Tempura - no need to have the michelin star places but would like to try something that is considered one of the best
Chazuke - any good places around where we are staying ?

Izakaya - any kid friendly ones in Shibuya for lunches ?
Yakitori - obviously the alleys at Shinjuku won't be an option, any other suggestions?
Japanese pasta - any good ones to have with family ?

Robatayaki - give me the best we can experience with kids ?
Shabu Shabu - would like to get into a good place during a cold blistering winter
Yakiniku - where to go around where we are staying ?

Udon - my kids love udon, but we need kids friendly places please
Kobe Beef - where's the best place that is not counter and kids friendly ?
Unagi - any good ones around Tokyo Station or Shibuya ?

Nabe - again, would love recommendation during cold winter nights ?
Oden - which one is the best to go with kids around Marounochi ?
Oyakodon - where to go ?

Will be visiting Ginza for one full day as well, and exclusively will be at Ginza Six, any recommendation for family in the new mall ?
