You folks were so good with the gelbwurst that I'm going to throw out another question.
Today I bought a banh mi at a Viet/Yucatan place. Besides what looked more or less like ham, there was a mystery meat I haven't seen before. It is a rectangular luncheon meat that is bright red with large white spots and hot pink "strings" running through it. The white spots look like fat but it doesn't seem to be fat. It has a bit of crunch to it, like maybe cartiledge. My neighbor took a look and she was stumped too. She guessed some type of ear sausage.
Anybody know? Thanks! I can't stop staring at it!
