I would love to know who makes the best mozzarella in Philly. I went to DiBruno brothers at Thanksgiving to buy some and what they gave me was way past its prime, even though I had specifically asked for a ball from a fresh batch. I've never been a big fan of DiBrunos mozz in the past but this was actually at the turning sour stage. To make matters worse, I was lectured by the top cheese guy that mozz needs to sit for a few days in order to develop proper flavor and that I wouldn't like it that fresh. I didn't bother to argue but I've had mozz the same day it was made and still at room temperature and there is nothing like it in this world. I prefer it if I can get some that's never been refrigerated. I also prefer mine lightly salted. Don't get me wrong, I'll continue to buy other delicacies there as I have for the past 25 years, just not the mozz.
