I'm from Canada and I want to make a mole but have not been able to find the right chiles anywhere. I've been looking online but it seems like it will be very expensive to ship the holy trinity of mulatos, anchos and pasillas up north.
I have a number of dried chiles already, but not much knowledge in with them.
I have: chiles new mexico, anaheim chiles, guajillo chiles, chile de arbol and chile chipotle.
I've looked at the Scoville scale but there is more to a chile than just its heat. Could some that I have be substituted to produce a similar end product?
