So I bought a 12 lb turkey Wednesday night and it is now Friday morning. I was aiming for a Friendsgiving dinner on Saturday, served at 5 pm. I put it in the fridge right away, but I know that according to thawing guidelines, it wont be ready in time. I know there are the options of microwaving and cooking it frozen, but I would prefer not to. I was wondering if there's a way to do a combination of refrigerator and cold water thawing? If I could throw in a dry brine too, that would be great, maybe during last stages of thawing?
