Mini quiches--recipe proportions?

I want to make a quiche filling to use in those tiny little filo tart shells. Anyone have an idea of what the quantities and proportion would be for the egg and heavy cream?

Also, I want to put a tiny dollop of caviar on each little tart. So I am thinking smoked salmon and chives to flavor the quiche. Any other suggestions of what sort of decadent flavors would go well with caviar?
