I'm a fairly new resident of Milwaukee and I love fried fish. So I was excited to learn of the Friday night tradition all over town...until I tried a few.
I won't name any names, but I've eaten at a few *very* popular places. Including one that serves about 500 meals a night, with people lined up out the door waiting for tables.
Yet these places all served frozen cod that tasted hastily (and greasily) fried. Cafeteria-grade pre-breaded frozen shrimp. "Filets" of exactly uniform size and shape. Etc.
Why no fresh lake fish? Walleye or perch or...??? One place even bragged that their cod was from Alaska, not the North Atlantic. As if that would make a difference; cod's about the most un-interesting fish you can fry. After all if you're going to use frozen sea food, why not some flounder?
I lived in New Orleans for a few years so perhaps my baseline for acceptable fried fish is impossibly high. Yet you'd think an old tradition like this would yield good results?
Help me out here, please steer me to the good fish. Or are my standards simply too high?
