Where to go in Mexico for good food and a cooking class?

Hi,
I went to Oaxaca City a couple of years ago and had a great time eating all over town and taking a cooking class (at Seasons of My Heart, in Etla). The Hotel, Las Golondrinas, was also a highlight (spacious rooms, beautiful foliage and birds in the courtyards).

I'm planning a trip back to Mexico for the end of March, and I'd love some advice on where to go. I had though about going back to Oaxaca, but the cooking school I had gone to isn't offering any classes at that time.

Ideally, I'd love to find a place where I can eat delicious food, spend a day or two in a cooking class, and spend a couple of days walking or biking around to local sites, or browsing for local crafts. Does anyone know of another city I should look into? Or, another good cooking school near Oaxaca City?
