What is it about Mexican squash soup?

Some recent experiences at Moles La Tia and Chichen Itza had a strange similarity - in both cases, I was blindsided by how good the squash soup was. Intense, deep, glowing, mysterious, magical - basically, every good word that could be applied to squash soup, could be applied here.

Is there some mysterious vein of squash soup wonder that I've been missing all my life up until now?

Are there more of these excellent squash soups around here?

Was I just suffering from a particular vitamin deficiency?

They were magical soups.
