Menu and wine advice, please

here are my ideas for a Christmas lunch at my house with old friends:

Hors d'Oeurves

Goat cheese and fig jam in prosciutto cups
Ginger scented pecans

Lunch (all served on one big platter)

Grilled bacon-wrapped scallop skewers
Roasted Sweet potatoes w/ cilantro/lime vinaigrette
Fennel/Orange/Arugula salad

Assorted Christmas cookies & Beaume de Venise

(For anyone who answered my wine pairings question about the chili lime shrimp, thanks so much, but my fishmonger has sold me crappy shrimp twice since then and I dare not try to serve them)

Questions:
Anyone made prosciutto cups as hd holders? I'm planning to line mini muffin cups w/ prosc. and bake at 350 for 20 min, then fill.

Do you consider bacon wrapped scallops either hopelessly passe or too heavy for a main course?

Wine pairing that will be OK w/ the hd's as well? It's lunch, so I'm only opening one bottle + the dessert wine. I have a Rhone white blend at home, would that work? would I be better off w/ sauv blanc or champange?

I had planned to make gougeres, but wonder now if it's too much food for lunch.

Comments on the menu itself? better ideas?
