I am planning some meals for a weekend away with friends and I was wondering if any of you hounds with expertise in Indian cuisine could help me with something.
One of the planned dinner's is to be Indian and the requested dish is either chicken tikka masala or butter chicken. I'm ok with these but typically when I am just cooking for my family I would serve with basmati and a simple salad. Since this is a larger group I wanted to do an Indian vegetable side that was healthful, "dry", and free of pork (one guest does not eat pork). I say dry in the sense that I would prefer not to serve two wet curries, but this isn't a must.
I have a few Indian books at home (660 Curries and Pushpent Pant's India the Cookbook) and I've thumbed threw them but I didn't come across anything that jumped out at me. Perhaps because I'm on menu planning overload.
Any help is much appreciated.
