Having guests with high expectations on Saturday. After perusing entire cookbook fleet, have settled on braised lamb shanks (in red wine, tomato, and stock with rosemary and olives) served over soft polenta and a simple green salad.

Need suggestions for wine, casual pre-meal nibbles, and dessert (leaning toward a light ricotta "pudding").
