So I am planning to open up a meatball food stand serving different kind of meat balls (pork, beef, chicken etc), and a few number of sauces to go along with it.
The idea is a customer can just pick which protein they want, they which sauce to go with it. Then eat it to go.
My question is can you guys suggest a way i can hold the meatballs (cooked) for a whole day? Like would it be practical to hold it in a steamer to maintain temperature (and to avoid danger zone)? Or perhaps in a bain marie? (wouldnt it dry out?) Or are there any ways I can go around it?
The sauce I have no problem as i can just leave it simmering constantly in a bain marie.
