My wife and I are about to have our first child. I generally do all of the cooking in the house, and I'm looking for dishes that can provide several meals--one-dish creations that I can make ahead and refrigerate/freeze for multiple future uses.
Here's the rub: my wife doesn't eat meat (poultry is ok, but no beef or pork), and she tends not to like heavy dishes, which rules out a lot of the one-dish meals of my youth (my kingdom for a tuna noodle casserole). We tend to make lots of light seafood-y things--and I've found that fish dishes don't keep all that well.
I just did a turkey lasagne that I like, and I have plans for a veggie chili and a rosted chicken in the coming weeks. Any suggestions for a few more dishes of this ilk?
