Thanks for the suggestions. Sorry I didn't get back sooner. The matzoh balls were a big hit! Most of the kids had never even heard of them. In the end, I ended up just cooking 5 boxes of premade mix, made the matzoh balls extra small, cooked it in a roasting pan so the balls would have room to cook and took it all to school in a couple of crockpots.
I agree about the latkes, by the way. The problem is cooking on the spot for 85 kids - can't be done. The logistics of the situation demanded that I prepare everything ahead of time. There are a lot of foods that I'd like to make for them that just can't be done on the spot and I REALLY can't impose on our poor, overworked lunch ladies to take up some of their badly needed space.
Plus, I still need to teach real classes.
