I have a recipe for choux paste that makes 2905 grams of dough. I need to make 1000 gm (1 kilo) of dough.
Water 1000 g
Salt 5 g
Shortening 300 g
Bread Flour 300 g
Pastry Flour 300 g
Whole Eggs 1000 g
I am totally incapable of doing this. Why? Don't know. Should I try to figure it out to 3000 gm then divide by 3 ...?
This is for a baking test I'm doing so I have to be right. I'd appreciate the help.
