Mario Batali's stuffed meatloaf

I made this out of his "Molto Italiano" cookbook and it was great. I have linked the recipe below, but it is different than what was in his book. Basically, he used the same amount of carrots, doubled the spinach and halved everything else except the breadcrumbs. I guess he had to fine-tune! I have a picture but can't figure how to include it.
