making sushi/sashimi at home

so I don't know the correct terminology, but know what I"m talking about.

My wife and I want raw fish for dinner. preferably tonight. but we want it at home. We may make some rolls as well, but mostly what I'd like is to get some tuna, salmon, squid... (some kind of whitefish), slice it, and eat it. But I have no idea what todo.

How do I know if the seafood is up to snuff? Assuming I usually shop at a wholefoods, which seems to have reasonable quality seafood. Do I need to treat it in some special way before hand?
