I'd like to suprise my mom by making her some jam, well, once the berries are in season at our PYO. My mom is a big fan of NYC's Le Pain Quotidien's no sugar added berry jams. I am a lover of Bionature's apricot no sugar jam. This is by way of giving those who've had either/both a sense of the textures and intensity of flavor we're looking for--basically thick, yet not gelatinous, the sweetness provided solely by fruit and, if necessary, white grape juice.
We've always made jam from the recipe on the Sure-Jell packet and have tried the lower sugar, but really, the sugar's only reduced from like 7 cups to 5 or something like that.
Anyway, if any of you have a great recipe for a sugarless jam, one which won't be like a thin syrup, please post or send me to a cookbook where I might be able to find it.
